Ingredients:
4 large baking potatoes
1 lb shrimp, peeled and deveined
2 tbsp olive oil
1 tbsp Cajun seasoning
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup chopped green onions
Directions:
Preheat oven to 400°F. Bake potatoes for 45-50 minutes until tender.
In a skillet, heat olive oil over medium-high heat. Add shrimp and Cajun seasoning. Cook until shrimp are pink and opaque.
Split baked potatoes and fluff insides. Top with shrimp, cheddar cheese, sour cream, and green onions.
