Gooey Brie and Bacon Grilled Cheese with Blackberry Jam

Ingredients:
8 small-medium slices of bread (like poppy-seeded white bloomer)
8 slices of bacon, fried or baked to your preferred crispness
2 heaping cups (300g) fresh blackberries
7 oz (200g) brie, sliced into wedges (3 per sandwich)
1 lemon, juice only
4 tablespoons granulated sugar
4 pinches of chili flakes (optional)
Butter, as needed for toasting
Instructions:


Make the Blackberry Jam:
In a small pot over low-medium heat, add the fresh blackberries, granulated sugar, and lemon juice. Use a potato masher to gently burst the berries, creating a thin sauce. Turn up the heat to medium-high and let the mixture bubble and reduce, stirring frequently. Keep cooking until it thickens into a jam-like consistency. Remember that the sauce will continue to thicken as it cools.
Assemble the Sandwiches:


Butter one side of each bread slice. With the heat off, add two slices of bread butter-side down into a large pan (or as many as fit). Spread 1 heaping tablespoon of blackberry jam on each, then top with 3 wedges of brie and 2 slices of bacon. If you like a bit of spice, sprinkle a pinch of chili flakes over the bacon. Top with another slice of bread, butter-side up.
Grill the Sandwiches:


Turn the heat to medium and grill the sandwiches on both sides until golden brown and crispy, with the brie beginning to melt and ooze out. Repeat with the remaining sandwiches if necessary.
Serve and Enjoy:


Slice the sandwiches in half and serve while warm. Enjoy the gooey brie, crispy bacon, and sweet-tart blackberry jam!
