Ingredients:

• 1 small onion, thinly sliced
• 3 cups mushrooms (white or cremini), sliced
• 2 garlic cloves, minced
• 1 tsp thyme leaves (fresh or dried)
• Salt and pepper to taste
• Bread of choice (like sourdough or a hearty sandwich bread)
• Cheese (such as Swiss, cheddar, or Gruyère, for melting)

Directions:

  1. Cook the mushrooms and onions:
    • Heat the olive oil in a large skillet over medium heat.
    • Add the thinly sliced onion and sauté for 5-7 minutes, until softened and slightly caramelized.
    • Add the sliced mushrooms, minced garlic, and thyme. Cook for another 5-7 minutes, stirring occasionally, until the mushrooms are tender and browned.
    • Season with salt and pepper to taste.
  2. Prepare the sandwich:
    • While the mushroom mixture is cooking, lightly toast your bread slices in a separate pan or toaster.
    • Once toasted, layer some of the cooked mushroom mixture on one slice of bread.
  3. Add the cheese:
    • Place slices of cheese over the mushroom mixture and top with the second slice of bread.
  4. Grill the sandwich:
    • In the same skillet you used for the mushrooms (or a clean one), melt a little butter or olive oil over medium heat.
    • Grill the sandwich for about 3-4 minutes per side, pressing lightly to ensure the cheese melts and the bread gets golden and crispy.
  5. Serve:
    • Remove from the skillet, slice, and serve warm.
