Flourless Cottage Cheese Pancakes
Ingredients:
1 cup cottage cheese (preferably small curd for smoother pancakes)
2 large eggs
1/4 cup rolled oats (optional, for added texture and slight binding)
1/2 tsp baking powder
1/4 tsp vanilla extract
Pinch of salt
Butter or oil for cooking (coconut oil is a good option)
Optional toppings: Syrup, fresh fruit, berries, whipped cream, etc.
Instructions:
1. Combine Ingredients: In a blender or food processor, combine the cottage cheese, eggs, rolled oats (if using), baking powder, vanilla extract, and salt. Blend until smooth. If you prefer a slightly thicker pancake, let the batter sit for 5-10 minutes to allow the oats to absorb some moisture.
2. Heat the Griddle: Heat a lightly oiled or buttered griddle or frying pan over medium heat.
3. Cook the Pancakes: Pour 1/4 cup portions of batter onto the hot griddle.
4. Flip When Bubbled: Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip the pancakes when bubbles start to form on the surface and the edges look set.
5. Serve and Enjoy: Serve immediately with your favorite toppings.
