Creamy Avocado & Tomato Salad
Ingredients :
For the Salad:
• 2 ripe avocados, diced
• 1 cup cherry tomatoes, halved
• ½ cup mozzarella balls (bocconcini), halved
• ¼ cup fresh parsley, chopped
• ¼ cup fresh cilantro or basil, chopped
• Freshly ground black pepper, to taste
For the Creamy Dressing:
• 3 tbsp Greek yogurt or sour cream
• 1 tbsp mayonnaise
• 1 tbsp olive oil
• 1 tsp Dijon mustard
• 1 clove garlic, minced
• Juice of ½ a lemon
• Salt & black pepper, to taste
Instructions :
1. Prepare the Salad Base:
• In a large bowl, combine the diced avocados, cherry tomatoes, and mozzarella balls.
2. Make the Dressing:
• In a small bowl, whisk together Greek yogurt (or sour cream), mayonnaise, olive oil, Dijon mustard, minced garlic, lemon juice, salt, and black pepper until smooth and creamy.
3. Toss the Salad:
• Pour the creamy dressing over the salad and gently mix to coat all the ingredients evenly.
4. Garnish & Serve:
• Sprinkle with fresh parsley, cilantro (or basil), and a touch of black pepper.
• Serve immediately and enjoy it fresh!
