Ingredients :
2 cups rolled oats
1 ripe banana, mashed
½ cup peanut butter
2 tbsp maple syrup or honey (optional)
1 tsp vanilla extract
½ tsp cinnamon
Directions :


Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper, leaving some overhang for easy removal.
In a large mixing bowl, mash the ripe banana until smooth. You can use a fork or potato masher—just make sure there are minimal lumps for even mixing.
Add the peanut butter, maple syrup (or honey), vanilla extract, and cinnamon to the mashed banana. Stir until everything is well combined and smooth.
Fold in the rolled oats. The mixture will be thick, so use a sturdy spatula or wooden spoon to mix it thoroughly. Make sure the oats are evenly coated with the wet mixture.
Transfer the mixture into the prepared baking dish. Press it firmly into an even layer using the back of a spoon or your hands. Pressing it tightly helps the bars hold together after baking.


Bake for 15-20 minutes, or until the edges are lightly golden. Keep an eye on them at the 15-minute mark to prevent overbaking, which can dry them out.
Remove from the oven and let the bars cool in the pan for about 10-15 minutes. Then, lift them out using the parchment paper and transfer to a wire rack to cool completely.
Once cooled, cut into bars or squares. Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
