Baked Spinach Mushroom Quesadillas
Ingredients:
4 tortillas (8-inch)
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
3 cups roughly chopped spinach
8 ounces sliced mushrooms
Olive oil (optional, for brushing the tortillas)
Instructions:
Prep the Mushrooms: Sauté the mushrooms in a skillet over medium heat until softened and browned.
Assemble the Quesadillas:
Preheat oven to 400°F (200°C).
Lay out two tortillas on a baking sheet.
Top each tortilla with half of the spinach, mushrooms, and cheese.
Top each with another tortilla.
Brush the tops of the tortillas with olive oil, if desired.
Bake: Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly, and the tortillas are golden brown.
Cut and Serve: Cut each quesadilla into wedges and serve immediately.
Tips:
