Ingredients :
250g penne pasta (or short pasta)
1 tsp olive oil
1 red onion, peeled and chopped
2 garlic cloves, peeled and chopped
2 tsp smoked paprika
1 tsp oregano
225g halloumi, cut into cubes
200g chorizo, sliced
500ml passata
2 tsp sugar
3 tbsp double cream
50g grated Grana Padano (or Parmesan)
2 tbsp chopped parsley
Directions:
- Heat olive oil in a pan and fry onion and garlic for 3-4 minutes. Cook pasta until al dente and set aside.
- Stir in smoked paprika and oregano, cook for 1 minute.
- Add halloumi and chorizo, fry until halloumi turns golden.
- Stir in passata, sugar, and cream. Simmer for 10 minutes.
- Add pasta, warm through, and serve with parsley and grated cheese.
