Ingredients :
4 cups fresh green beans, trimmed (or 2 cans, drained)
4 medium potatoes, cubed (Yukon Gold or red potatoes work best)
6 slices bacon, chopped
1 small onion, diced
2 cloves garlic, minced
2 tablespoons unsalted butter
1 cup chicken broth
1 teaspoon ranch seasoning mix
½ teaspoon smoked paprika
½ teaspoon black pepper
Salt to taste
Fresh parsley for garnish (optional)
Instructions
1. Cook the Bacon:
In a large skillet or Dutch oven, cook the chopped bacon over medium heat until crispy.
Remove the bacon with a slotted spoon and set aside, leaving about 2 tablespoons of bacon grease in the pan.
2. Sauté the Onion & Garlic:
In the same pan, add the diced onion and sauté until soft (about 3 minutes).
Stir in the garlic and cook for another 30 seconds, until fragrant.
3. Cook the Potatoes & Green Beans:
Add the cubed potatoes, chicken broth, ranch seasoning, smoked paprika, pepper, and salt to taste.
Cover and simmer over medium-low heat for 10 minutes, stirring occasionally.
Add the green beans, cover, and continue cooking for another 8-10 minutes, or until the potatoes are fork-tender and the green beans are tender-crisp.
4. Finish with Bacon & Butter:
Stir in the cooked bacon and unsalted butter for extra richness.
Taste and adjust seasoning if needed.
5. Serve & Enjoy:
Garnish with fresh parsley if desired.
Serve warm as a side dish or enjoy as a hearty main course.
