Flourless Oatmeal, Apple & Carrot Cake (No Sugar, No Flour)
This healthy, naturally sweetened cake is made with oats, apples, and carrots. It’s soft, moist, and perfect for a nutritious snack or breakfast!
Ingredients:
- 2 cups (200 g) rolled oats, blended into a coarse flour
- 1 teaspoon baking powder
- 1 cup (240 ml) milk (dairy or plant-based)
- 1 medium carrot, grated
- 1 apple, grated
- 9 dried apricots, rinsed with hot water and chopped
- 2 eggs
- 1/2 teaspoon cinnamon (optional, for extra flavor)
- 1/2 teaspoon vanilla extract (optional)
- A pinch of salt
Instructions:
- Prepare the oats: Blend the rolled oats in a blender until they have a coarse flour-like consistency.
- Mix dry ingredients: In a large bowl, combine the blended oats, baking powder, cinnamon, and salt.
- Mix wet ingredients: In another bowl, whisk the eggs, then add the milk, grated carrot, grated apple, chopped apricots, and vanilla extract. Mix well.
- Combine everything: Pour the wet mixture into the dry ingredients and stir until well combined. Let the batter sit for 5–10 minutes to allow the oats to absorb the liquid.
- Prepare the baking pan: Line a cake pan with parchment paper or lightly grease it with oil.
- Bake: Pour the batter into the pan and spread it evenly. Bake in a preheated oven at 180°C (350°F) for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool & Serve: Let the cake cool for a few minutes before slicing. Enjoy warm or at room temperature!
Tips:
- If you prefer a sweeter cake, you can add mashed banana or a handful of raisins.
- Serve with yogurt, nut butter, or fresh fruit for extra flavor.
