How to Make Flourless Oatmeal Apple & Carrot Cake

Flourless Oatmeal, Apple & Carrot Cake (No Sugar, No Flour)

This healthy, naturally sweetened cake is made with oats, apples, and carrots. It’s soft, moist, and perfect for a nutritious snack or breakfast!

Ingredients:

  • 2 cups (200 g) rolled oats, blended into a coarse flour
  • 1 teaspoon baking powder
  • 1 cup (240 ml) milk (dairy or plant-based)
  • 1 medium carrot, grated
  • 1 apple, grated
  • 9 dried apricots, rinsed with hot water and chopped
  • 2 eggs
  • 1/2 teaspoon cinnamon (optional, for extra flavor)
  • 1/2 teaspoon vanilla extract (optional)
  • A pinch of salt

Instructions:

  1. Prepare the oats: Blend the rolled oats in a blender until they have a coarse flour-like consistency.
  2. Mix dry ingredients: In a large bowl, combine the blended oats, baking powder, cinnamon, and salt.
  3. Mix wet ingredients: In another bowl, whisk the eggs, then add the milk, grated carrot, grated apple, chopped apricots, and vanilla extract. Mix well.
  4. Combine everything: Pour the wet mixture into the dry ingredients and stir until well combined. Let the batter sit for 5–10 minutes to allow the oats to absorb the liquid.
  5. Prepare the baking pan: Line a cake pan with parchment paper or lightly grease it with oil.
  6. Bake: Pour the batter into the pan and spread it evenly. Bake in a preheated oven at 180°C (350°F) for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool & Serve: Let the cake cool for a few minutes before slicing. Enjoy warm or at room temperature!

Tips:

  • If you prefer a sweeter cake, you can add mashed banana or a handful of raisins.
  • Serve with yogurt, nut butter, or fresh fruit for extra flavor.
