One Pot Creamy Sun Dried Tomato and Spinach Pasta with Chicken
Ingredients
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 tablespoon olive oil
1 teaspoon garlic powder
½ teaspoon dried oregano
¼ teaspoon red pepper flakes (optional)
Salt and pepper to taste
½ cup sun-dried tomatoes, packed in oil, drained and chopped
8 ounces pasta (penne, rotini, or fusilli)
3 cups chicken broth
1 cup Greek yogurt
1 cup packed baby spinach
½ cup grated Parmesan cheese
Instructions
- Cook the Chicken
Heat olive oil in a large pot or deep skillet over medium-high heat.
Season the chicken pieces with garlic powder, oregano, salt, and pepper.
Add the chicken to the pot and cook until browned and fully cooked (about 5-7 minutes). Remove and set aside. - Sauté the Sun-Dried Tomatoes
In the same pot, add the chopped sun-dried tomatoes and sauté for 1-2 minutes to release their flavor. - Cook the Pasta
Add the pasta and chicken broth to the pot. Bring to a boil, then reduce heat to a simmer.
Cover and cook for 8-10 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed. - Make It Creamy
Lower the heat and stir in Greek yogurt until creamy and smooth.
Add the cooked chicken back into the pot. - Add the Spinach and Cheese
Stir in the baby spinach and cook until wilted (about 2 minutes).
Add the grated Parmesan cheese and mix until melted and well combined. - Serve
