Canned Salmon Patties (Best Ever)
Ingredients:
2 (14.75 oz) cans salmon, drained and flaked
2 eggs, beaten
1/2 cup breadcrumbs
1/4 cup finely chopped onion
2 tablespoons fresh parsley, chopped
1 garlic clove, minced
1 teaspoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 tablespoons olive oil for frying
Directions:
In a large mixing bowl, combine the flaked salmon, beaten eggs, breadcrumbs, chopped onion, parsley, minced garlic, Dijon mustard, salt, and pepper. Mix thoroughly until the mixture is well combined and holds together.
Shape the mixture into 8 patties, each about 1/2 inch thick.
Heat the olive oil in a large skillet over medium heat. Carefully place the patties in the skillet, and fry for about 4 minutes on each side, or until they are golden brown and crispy.
Serve the salmon patties hot, with a side of lemon wedges and tartar sauce or a creamy dill sauce.
