Ingredients:

4 Andouille Sausages (minced)

1 lb (455 g) Shrimp (peeled and deveined)

4 Red Potatoes (cut into quarters)

2 Ears of Corn (quartered)

2 tsp Olive Oil, divided

1 tsp Butter, cubed

4 Garlic Cloves, minced

Cajun Seasoning Blend:

2 tsp Garlic Powder

2 ½ tsp Paprika

1 tsp Dried Oregano

1 tsp Onion Powder

1 tsp Dried Thyme

1 tsp Red Pepper Flakes

1 tsp Cayenne Pepper

2 tsp Salt

1 tsp Black Pepper

Instructions:

  1. Preheat the Oven
    Set your oven to 375°F (190°C).
  2. Prepare the Cajun Seasoning
    In a small bowl, mix all the Cajun seasoning ingredients together until well combined.
  3. Season the Vegetables
    In a baking dish, combine red potatoes, corn, 2 minced garlic cloves, 1 tsp olive oil, and ½ tsp of the Cajun seasoning blend. Toss until the vegetables are evenly coated. Add small cubes of butter on top.
  4. Cook the Sausages and Shrimp
    In a skillet, heat the remaining olive oil over medium heat. Sauté the minced andouille sausages until slightly browned. Add the shrimp and cook until pink and opaque, sprinkling them with the remaining Cajun seasoning.
