For the Chicken:
• 3-4 boneless, skinless chicken breasts,
cut into bite-sized pieces
• 1/2 cup cornstarch
• 2 large eggs, beaten
• 1/4 cup vegetable oil (for frying)
For the Sweet and Sour Sauce:
• 3/4 cup granulated sugar
• 1/2 cup apple cider vinegar (or rice vinegar)
• 1/4 cup ketchup
• 1 tablespoon soy sauce
• 1 teaspoon garlic powder
• 1/4 teaspoon ground ginger
• 1/2 teaspoon salt
• 1 tablespoon cornstarch mixed with 1 tablespoon water (optional for thickening)
Instructions:
Step 1: Prepare the Chicken
1. Preheat the Oven: Preheat your oven to 325°F (163°C). Grease a 9×13-inch baking dish or line with parchment paper.
2. Coat the Chicken: In one bowl, add cornstarch. In another bowl, beat the eggs. Dip each chicken piece first into the cornstarch, coating it well, and then dip into the beaten eggs.
3. Fry the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces in batches until they are lightly golden on the outside (about 2 minutes per side). The chicken does not need to be fully cooked at this stage as it will finish baking in the oven. Transfer the browned chicken pieces to the prepared baking dish.
Step 2: Make the Sweet and Sour Sauce
1. Mix the Sauce: In a medium bowl, whisk together the sugar, vinegar, ketchup, soy sauce, garlic powder, and ground ginger. If you prefer a thicker sauce, mix 1 tablespoon of cornstarch with 1
2. tablespoon of water and stir into the sauce.
Step 3: Bake the Chicken
1. Pour the Sauce Over Chicken: Once all the chicken is in the baking dish, pour the sweet and sour sauce evenly over the chicken.
2. Bake: Bake the chicken uncovered for 1 hour, stirring every 15-20 minutes to coat the chicken evenly in the sauce.
Step 4: Serve
1. Serve: Once the chicken is fully baked and the sauce has thickened, remove from the oven and let it rest for a few minutes before serving. Serve with steamed rice and vegetables for a complete meal.
