Savory Garlic Mushroom Chicken with Spinach
Ingredients:
- 2 boneless, skinless chicken breasts
- Salt and black pepper, to taste
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 2 cups mushrooms, sliced
- 4 garlic cloves, minced
- 1 cup chicken broth
- 1/4 cup heavy cream
- 1 teaspoon dried thyme
- 3 cups fresh spinach
- Cooked pasta or rice (optional)
Directions:
- Season chicken breasts with salt and black pepper.
- Heat olive oil in a skillet over medium heat. Cook the chicken for 5-6 minutes per side until golden and fully cooked. Remove and set aside.
- In the same skillet, melt the butter. Add mushrooms and sauté until browned, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Stir in chicken broth, heavy cream, and thyme. Simmer for 5 minutes until the sauce slightly thickens.
- Add spinach and cook until wilted, about 2 minutes.
- Return the chicken to the skillet and spoon the sauce over it. Cook for another 2 minutes to heat through.
- Serve warm over pasta or rice if desired.
